Let’s be real, getting dinner on the table most nights is haaaard!
I always think I have more time in the evenings than I actually do. No matter how many nights I fail to get it all done, I still add too much to my mental list. It seems like between getting home and going to bed there’s plenty of time to make dinner, enjoy dinner around the table with family, help kids with homework, bath time, connect with spouse, check out a show on Netflix and still make it to bed in time to read before drifting off.
As any mom knows, the reality is that half of that will get done and due to the critical nature of importance, I will not be watching Netflix and in order to read I will sacrifice the early bed time. Life is busy, especially with kids and their obligations. The last thing needed is a complicated dinner recipe to follow calling for every single dish in the kitchen.
Here’s the deal though, dinner is critically important for a number of reasons. First, health. Where are you without your health? What good are you to your family and the rest of the world if your health is suffering? This is where the oxygen mask must go on first. Your health and the health of your family is a top priority so dinner, and the ingredients we use are too.
Secondly, family meals and conversations are equally important. I grew up in a household where we ate around the dinner table together every single night at 7 pm sharp! Even my friends knew I could hang before or after dinner, but I needed to be home for dinner. In fact many friends joined my family around the dinner table because no matter what was going on, we paused for dinner. These family dinners shaped who I am today. We discussed important events of the day, thoughts, feelings, struggles and successes. Your kids and your spouse will talk to others about how they’re doing, wouldn’t you rather it be you?
So now that we know we need to prioritize dinner, how do we make dinner and keep all the things on track? We keep it simple and I have a recipe for you that’s in rotation in our home because it’s simple, delicious and nutritious!
Enter the sheet pan meal. Have you heard of these? If not, time to get it together! These are the best meals because they are literally cooked on one sheet pan, in the oven. If you use tinfoil, you don’t even need to any dishes. Can I get an AMEN!?
Here’s something else you need to know about me and my recipes. I don’t follow recipes. I don’t like people telling me what to do which is why I don’t bake. I like recipes that allow me to improvise with what I have on hand and get creative. I like a general outline of a meal but not ones that have to followed exactly or everything falls apart. So get creative with the recipe below, make it your own and don’t be afraid to think outside of the box!
Ingredients:
– Veggies of your choice such as: broccoli, asparagus, green beans, cauliflower, potatoes, tomatoes, peppers
– Sausage of your choice
– Olive Oil
– Salt & Pepper
– Herbs
– Parmesan Cheese (optional)
– Rice (optional)
Recipe:
1.) Preheat oven to 400 degrees
2.) Cut up veggies into bite size chunks (make them as even as you can so they cook uniformly)
3.) Cut up sausage
4.) Coat veggies in olive oil, just enough to cover veggies so they don’t stick to the pan
5.) Spread veggies and sausage on sheet pan making sure they’re in one even layer, not stacked on top of one another.
6.) Season with salt & pepper and seasonings of your choice (I like garlic powder, oregano and these specialty seasonings from Penzeys Spices.)
7.) Put into the preheated oven and set a timer for 20 minutes. Every 20 minutes take the pan(s) out and stir the veggies. Put back in for another 20 until done.
8.) Serve with parmesan cheese or rice if you’d like, again make it your own. 🙂
